Recently I was contacted by someone informing me of a link that might be of interest to our readers, and indeed it was! 30 Great Recipes for a Healthy 2014 consists of a compilation of some great tasting meals to help kick start your way to a healthier year. Ingredients:

  • olive oil spray
  • 1/2 cup minced onion
  • 1 cup shredded potatoes, Simply Potatoes
  • dash of garlic powder
  • salt and pepper to taste
  • 1 cup egg whites or egg beaters, beaten
  • 2 tbsp diced onions
  • 1/4 cup diced bell peppers
  • 0.8 oz reduced fat swiss, chopped
  • 1 oz turkey ham, diced
  • dash of garlic powder
  • salt and pepper to taste
  1. Preheat oven to 375°F. Lightly spray a muffin tin with oil spray. Combine potatoes, 1/2 cup onion, garlic powder, salt and pepper. Fill each muffin tin with 1/4 cup of potatoes and press along the side of the tin so that it forms a nest. 
  2. Bake 35 minutes or until golden brown and edges are crispy. 
  3. While nests are baking, combine the egg whites with remaining ingredients in a medium bowl. 
  4. Remove nests from the oven when golden brown. 
  5. Fill each cup with about 3 tbsp of egg mixture. Return to the oven and bake an additional 17-20 minutes or until eggs are fully cooked.

Ingredients (Quantities as desired)

  • 8 whole wheat tortillas
  • Fresh spinach (about 2 cups)
  • One red onion
  • Jarred red peppers or sundried tomatoes
  • Black olives
  • Mozzarella cheese, shredded (a handful or so per serving)
  • Feta cheese (a few tablespoons per serving)
  • Oregano (dried or fresh)
  • Red pepper flakes (optional)
  1. Chiffonade the spinach. Thinly slice the red onion, red peppers, and black olives. 
  2. On a plate, place a tortilla. Sprinkle with your desired quantities of spinach, red onion, red pepper, black olives, mozzarella, feta, oregano, and red pepper flakes (if using). Be careful not to overload. 
  3. Heat a large non-stick skillet over medium heat for a few minutes. Place the loaded tortilla on the griddle and place another tortilla on top. Cook until browned on the bottom, then flip and cook until browned on the other side (a few minutes per side). 
  4. Remove the tortilla and cut into wedges with a pizza cutter. If making several quesadillas at once, you can keep them warm in a 300°F oven.

Strawberry, Chamomile and Quinoa Smoothie by She Knows.com

Ingredients for 1 serve

  • 1/2 cup chamomile tea
  • 1 tablespoon dried chamomile flowers (or 1 tea bag), plus extra flowers for garnish
  • 1 cup almond milk (or regular milk)
  • 1/4 cup cooked quinoa
  • 1/2 cup strawberries (fresh or frozen)
  • Honey
  1. Steep chamomile flowers in hot water for about 5 minutes. Strain flowers (or remove tea bag) if you don’t want to include them in the smoothie. If you want to include them for a more intense flavor, leave them. Refrigerate until cool.
  2. Put the almond milk, cold chamomile tea (and flowers if using), cooked quinoa and strawberries in a blender and blend until smooth. Sweeten with honey if needed.
  3. Garnish with dried chamomile flowers if desired.
